Even as the heat rages and the weather seems uncooperative, many across America, and the globe, are gearing up for a long-standing fall tradition:
Sports.
The World Cup is in full swing in Russia, the boys of summer are swinging their bats and football season will soon be upon us. College is about to begin a new Fall Semester. All of this sports means only one thing – party! Whether you prefer college or NFL football, Baseball, Soccer, Basketball, Hockey or all the above – now is your time. Tailgating, viewing parties, and good-natured insults abound as teams take to the fields and courts to battle it out for supremacy.
Whether you tailgate at the game or watch from the comfort of your own home, the festivities surrounding sports are as old as the sports themselves. Older, if you believe the theory that the first tailgate party actually took place in 1861! The recipes have gotten bolder and more people get in on the action today, especially if it’s a large event like the Super bowl or Kentucky Derby. One of my favorite casseroles to make for large groups is Frito Pie.
I bag Fritos corn chips (can use tortilla chips also)
2 cans chili (with or without beans as desired) or make your own
2 cups shredded cheddar cheese
1 can diced green chilies (or green onions if you don’t have access)
Preheat oven to 375. In a square baking dish, place a layer of Fritos to cover the bottom. In a separate bowl, mix the chili, green chilies and half the cheese together, then spread evenly across the layer of Fritos.
Add another layer of Fritos on top, and sprinkle the remaining cheese over it. Bake in the oven approximately 20 minutes or until cheese is melted. Serve with your choice of toppings, including sour cream, jalapenos and salsa. (Serves 8)
